Green teas

Freshly harvested leaves are stored in iron basins and then dried. This is followed by rolling and desiccation.

Optimal drying is the key to the flavour of a great green tea.

 

One of the most famous, Gunpowder tea has leaves rolled into small pellets. It is widely used in North Africa to make green mint tea, Chung Mee ("precious eyebrow”) and Lung Ching ("Dragon well”) whose leaves remain flat and tasty.
